Despite being one of the entry wines in the range, Terroirs is in fact a benchmark Blanc de Blancs. For the first time, this rendition comprises three vintages. More significantly, the level of reserve wine is now hitting 80%. When Pascal Agrapart last dialled up the reserve—from 40% to 60%—we witnessed a significant uplift in the wine’s complexity and vinous depth. You can expect the same from the new disgorgement. The 7 Crus sees a more modest increase in reserve wine, which now accounts for half the blend. The reserve wine matures in old 600-litre barrels from François Chidaine and Didier Dagueneau for both wines. We’re probably starting to sound like a broken record, but this producer’s viticultural and winemaking standards (to say nothing of the class in the bottle) put these wines at the very top of their genre. In our opinion, their quality surpasses prestige cuvées from many large houses. They are obviously far rarer, too. The new disgorgements are emblematic of the radiance, chalky intensity and crystalline precision we have come to expect from one of the true reference points for Côte des Blancs Chardonnay. They are also staggeringly delicious.
