Dormilona’s latest Chardonnay and Cabernet Sauvignon have arrived, and both are a strong reminder of why Jo Perry remains one of Margaret River’s most distinctive winemakers. Working with organically grown fruit and a light touch in the cellar, Jo makes wines with clarity, personality and real sense of place.

 

The Chardonnay brings purity, texture and easy generosity; the Cabernet Sauvignon, all savoury structure and site-driven character. Both are seriously good wines and make for astute buys given the quality on offer. If you’d like to taste, reach out to your rep.

Dormilona Chardonnay 2025

Jo’s Chardonnay comes from a Willyabrup vineyard in the heart of Margaret River, where sandy loam over granite helps shape a wine of purity, texture and quiet generosity.

Hand-harvested fruit was whole-bunch pressed to a mix of amphora and large-format oak, where it went through natural ferment and malo before being simply racked and bottled. The result is a Chardonnay with lovely ease and shape, balancing freshness with gentle weight and a softly layered feel that makes it a natural at the table.

Dormilona Cabernet Sauvignon 2025

From Yungarra Estate in Yallingup, this is 100% Cabernet Sauvignon from Jo’s small, dry-grown organic block. Set on a north-facing hillside with gravelly soils over limestone, it delivers the concentration, structure and site character that make Margaret River Cabernet so compelling.

Hand-picked fruit was foot-stomped and wild fermented in open vessels, followed by six weeks on skins to build depth and detail. The wine was then basket pressed to seasoned French oak barriques and raised with a gentle hand, racked just once and sulphured only at bottling. With no additives, fining or filtration, it’s a pure, vivid expression of the vineyard: savoury, textural and confidently structured, with plenty of personality and real appeal at the table.
