Cinchona Paloma

Cinchona Paloma

Midnight Mixers Amber Tonic's complex aromatics and flavours come directly from raw cinchona bark. Take a Paloma up a notch by using a bold, smoky Mezcal instead of a Tequila, and partnering it with the spicy/savoury notes of natural Amber Tonic. Garnish with salty finger lime for extra zip.

Midnight Mixers Amber Tonic
30ml Mezcal Union Uno Joven
45ml grapefruit juice

Build over ice and garnish with pink grapefruit and finger lime.

Mezcal Unión Uno Joven

Mezcal Unión’s core release is a blend of farm-grown Espadín agave and wild Cirial, sourced mainly from San Baltazar Guelavila in Oaxaca. Espadín is grown widely throughout the region and forms the cornerstone of most Mezcal bottlings. Cirial, on the other hand, takes much longer to grow—14 years as opposed to six to eight for Espadín. As a small component of the blend, it lends a mineral and herbaceous character to the blend. “When used with Espadín, Cirial gives balance to the sweet and fruity notes,” says Alejandro.

Uno starts out with soft layers of sweet citrus and panna cotta before moving toward archetypal Espadín notes of roasted tropical fruit combined with a little salinity and a hint of pepper. The level of smokiness is spot-on; confidently present without being overwhelming. There’s also an edge of citrus peel and a twist of green herbs in the mix—echoes of the wild Cirial. Perfectly primed for mixing, it's a great, well-priced Mezcal to have in the drinks cabinet.

"The ripe, fruity style of this mezcal lends itself to making margarita variations and other cocktails. Look for tropical fruit flavors like lychee and banana, and a mild note of jalapeño on the finish."

Midnight Mixers Amber Tonic 6 X 4 pack

Midnight Mixers Amber Tonic 6 X 4 pack

Midnight Mixers Amber Tonic is made in Victoria from raw cinchona bark – quinine in its natural form – with citrus, sugar and water, no additives and no preservatives.

Midnight Mixers cans are a perfect serve at 200ml. They’re light, compact and stackable, retail and bar friendly, both in and out of their 4-pack sleeves.

Sustainability is the central consideration for each part of Midnight Mixers packaging. From the low weight, Australian-made, fully recyclable aluminium cans through to cartons made locally from 100% post-consumer recycled cardboard and biodegrading adhesives; every element has been designed to minimise impact on the planet.

Each mixer in the range is designed to be intense yet balanced; to mix seamlessly with the best craft spirits. Amber Tonic layers exotic spice with a gentle astringency, making it a complete drink on its own and a versatile mixer behind the bar. Fine, compact carbonation enlivens the palate without dominating. Far from being limited to applications with Gin, Amber Tonic’s woody notes and fuller body strike balance with quality dark spirits, particularly Rum, Mezcal, Tequila and Vodka.
