We are delighted to share that as of 1 May 2026 the following producers are now part of the Bibendum family. These are producers we know well, many of whom we’ve worked alongside for years, and whose wines fit seamlessly into Bibendum’s core range.

This Riesling comes from three clones on the Estate block. The vines were hand-harvested, destemmed and pressed into monolithic 650L cement eggs for fermentation with full solids. At the end of ferment, the wine and lees went into large stockinger foudre for two years to mellow out. It was bottled without fining or filtration.



“Scents and flavours of watery margarita, salt rim included, a big squeeze of lime on top of that, green apple, some waxy texture and flavours, lemon myrtle, that zing of citrusy sorrel with its leafiness…There’s a good sense of friskiness despite the wash of texture, the finish broad but crackling with saline minerality.”

Ravensworth Estate Shiraz Viognier 2023

A proper homage to the Rhone with an Australian twist, this wine is blend of 95% Shiraz, 5% Viognier. The grapes co-fermented with 20% whole-bunches in open-top fermenters, and were plunged daily for 3-6 weeks. It spent a year in barriques (20% new) and another in large-format foudre. According to Bryan, this is a wine of “red fruit, spice and flowers.”  There’s a lift and elegance that we’ve previously attributed to the small percentage of Viognier, but after tasting many vintages, it’s clear this is just how the Syrah from Bryan’s high-flying block looks. Bottled without fining or filtration.

“A subtle, spicy, slick red of washy raspberry fruit character, wet leaf and undergrowth characters, some brambly blackberry notes, white mushroom, black pepper and peppery sage leaf characters. It feels like viognier is a very back note here, the vintage out and proud in diffuse nature and spread of flavours, plus the greenery found here, but in all that, a kind of pinosity, pleasing swish of texture and cool finish.”

“Medium purple-ruby in appearance, with white pepper spice on the nose for days... Fruit too: red cherry, redcurrant, blueberry, violet florals, herbal notes, hints of menthol. It's medium-bodied in a classical cool-climate way, with juicy weight and grip and a juniper spice thread. Layers and layers of texture and interest. It's light on its feet and an excellent choice for the Australian summer.”

“The 2023 Shiraz Viognier is a distinct wine here. One really gets the sense of the Viognier, being floral and wet, green and verdant, as an aromatic overlay to the Shiraz fruit. The palate reveals finely wrought tannins and pure acidity—a significant part of the show. The shaley minerality is very attractive, and the wine overall feels herbal and fine, with lemon myrtle and raspberry leaf, white strawberry and apple. It matured in French oak, both barrique and 27-hectoliter foudre. 13% alcohol, sealed under screw cap.”

Dormilona Chenin Blanc 2025

This fruit comes from Yungarra Estate, where the vines face north and sit on a gravelly limestone base. They use a unique lyre training system giving a ballarina-esque canopy that lets in filtered, dappled light. This helps protect the grapes throughout the season and ensures a lovely development. The grapes were hand-harvested and whole-bunch pressed into amphora, puncheon, and barrel. It rested there until blending and bottling.

Jo Perry sources the fruit for Skinnie from her good mate Ben Gould’s (Blind Corner) certified-organic vineyard in Quindalup. The property lies on the coastal flats, flanked by the Indian Ocean four kilometres to the north and eight kilometres to the west. The sandy soils have pea gravel (seven to 10 metres) over porous coffee rock and ironstone (25 metres) underneath. The fruit was harvested by hand and destemmed into amphora, where it fermented and rested on skins for five months. It was then basket-pressed to tank, where it settled briefly before bottling.

Commune of Buttons Basket Town Chardonnay 2024

The Basket Town Chardonnay comes from the Udys vineyard in Picadilly Valley and the Commune of Buttons home site. The former sits at 450 metres' altitude and has red clay over sandstone, quartz, and schist.

Each parcel was direct-pressed in a slow cycle, and moved to barrel after settling. The wine took its time in the winery with a long, slow, natural ferment, and saw one winter on lees in barrel before racking into tank—with lees—for another winter. The lees acted as a protective layer to prevent oxidation and maintain great freshness in the wine. The Chardonnay shows the signature savouriness we’ve come to expect from Commune of Buttons’ whites, with a mineral throughline and great palate weight from this warmer vintage.

Commune of Buttons Gloria Pinot Noir 2025

A barrel selection from the original 1992 plantings of Pinot Noir in the 1-hectare Gloria Vineyard. This low-yielding, dry-grown site sits on an east-facing slope of clay sandstone, quartz, and ironstone soils, with the latter contributing a subtle mineral character to the wine. The vineyard is planted to a mix of MV6 and 115 clones. Following hand harvesting, the fruit was carefully sorted and destemmed, with around 10% retained as whole bunches. Fermentation included a three-week maceration, after which the wine was matured for eight months in barriques (20% new oak) and a further four months in tank prior to bottling. It shows bright natural acidity and a core of red fruits—cherry, cranberry, and plum—lifted by an earthy, forest-floor complexity. A thread of rich ironstone-derived minerality adds depth and savoury structure to the finish. It's a beautifully well-balanced, elegant wine.

The Shed Chardonnay vines sit in the bottom section of the northeastern slope of the hillside Denton site. This year, a small plot of close-planted Gingin clone at the top of the hill was included in the P58 mix. The fruit was pressed to tank for cool, natural fermentation followed by 11 months’ maturation on lees and full malolactic conversion. Single-site Yarra Valley Chardonnay this good at these prices doesn’t come along very often.

"Bright and lively in the glass, with aromas of melon skin, stone fruit, grapefruit pith and white flowers. Fine and focused on the palate, with a drive of citrus, just-ripe peach and some crunchy, textured acidity. Long and with some grip and presence. Drink 2025-2030."

Denton Shed Pinot Noir 2024

Most of the fruit for Denton’s Shed Pinot Noir comes from Block 6, situated on the vineyard’s cooler northeastern slope. This year, a healthy dose of fruit was included from the estate’s close-planted Block 4 perched at the top of Denton Hill. The vines are predominantly MV6 with smatterings of 115 and Pommard clones from the southwest side of the vineyard. The fruit was fermented spontaneously with 10% bunches and gentle plunging or pumpovers twice daily. After two weeks on skins, the wine was pressed to a combination of tank (10%) and old French oak puncheons (90%) for nine months’ maturation. The wine was bottled without fining or filtration.

A mature family vineyard in Mildura on limestone studded red brown loam. Machine harvested fruit picked in the cool of dawn and immediately taken to the winery to be pressed without sulphur. Only the finest portion the heart, of the press taken. Juice fermented at cool temperatures. The wine was then settled to clarify before filtration and bottling.

Fruit for MDI Sangiovese comes from Denis Pasut’s well-established vineyard in Mildura. The 2023 season was cool and long, delivering low yields of top-notch, flavourful, complex fruit in pristine order for winemaker Kevin McCarthy to work with. The grapes were destemmed and fermented in tank. Maturation was for 16 months in seasoned barrels. The wine was tasted and topped regularly to maintain freshness and regularly racked to promote aromatic complexity via exposure to oxygen.

From the western slopes of Leanganook or Mt Alexander. Dash Farms planted N/S sits 475m up. Quartz and feldspar sand, or decomposed granite and planted to i clones in the late 1990's. A multitude of picks. The base of the wine is essentially one rolling ferment in stainless steel at cooler temperatures. The handling of each parcel is individual to reflect the needs of the fruit as its ripeness changes, both over time and as we progressively work down the hill at Dash Farms. This stainless ferment was stirred and moved to old barrels once completely dry. A small portion (less than 10%) was fermented in younger French oak. We select our favourite barrels and blend in late summer, bottling in-house April 2025. Some sulphur added.


“It works a treat. High drinkability, great freshness, tangy citrus with green apple, green pear, green mango, green melon. Dashes of vanilla cream, sweet spice, a touch of brine and cashew. It’s just shy of medium weight, crackles with energy, cool through the finish. Lovely stuff.”

Little Reddie Nebbiolo Refosco 2025

The first pick of the year was from Willoughby Bridge’s A Block, picked 8th of Feb. Direct pressed to Rosé with the latter part of the press fermented dry in barrel and later blended here. Followed by a later rosé pick from A-W block at Willoughby. Unusually at Chalmers, the Nebbiolo preceeded the Refosco harvets, owing to very low yields in the Nebbiolo. The macerated Nebbiolo portions in this year's wine came exclusively from the new Chalmers vineyard planting, the remnants after Pat had classified the row selection for his Pat Underwood wines.

These components were aged in various stainless and oak vessels according to their individual needs with various temperature and oxygen exposures depending on the tannin qualities of the individual wine. Pressing from all Colbinabbin reds were combined, and formed an important, delicious part of this wine. The wine was blended and retuned to barrel for a short period prior to bottling. Some sulphur added.

Winemaker Dave Mackintosh sourced his Grigio fruit from the Yarra Station vineyard in the Lower Yarra Valley. The steeply sloped, south-facing Yarra Station site has soils rich in granite and grey clay with ironstone running throughout. The fruit was picked early in the morning and immediately pressed to tank.

The fermentation started slowly, and the Yarra Station fruit was pressed directly to the same tank a few days later. Fermentation went for 18 days, with a peak temperature of 22°C. The wine was stirred a couple of times and matured for a few months before bottling.
