Twenty years on from the debut that redefined Sherry for the fine wine world, we have our latest shipment from Eduardo Ojeda and Jesús Barquín of Equipo Navazos. Selected and bottled by two of the most knowledgeable Sherry people on the planet (Ojeda the master blender of Grupo Estévez and Barquín the world's most respected Sherry critic), we have, as always, a range of insanely good, otherworldly Sherries.

 

For those new to the Equipo Navazos project, each La Bota is a singular, dated, en rama bottling, selected for both its quality and distinct character, with the precise saca noted on the label. This allows collectors to track and compare successive editions of any given solera or saca over time (assuming there is more than one). And as ever, once a release is gone, it is gone for good.

 

This latest set of wines is no exception, with allocations smaller than usual and stock on several bottlings already critically low. For anyone serious about Sherry, these are wines that must not be missed.

Saca de June 2022. This is the tenth release of La Bota de Manzanilla, which originates from the vineyards of Las Cañas (pagos Balbaína and Las Tablas) and La Soledad (pago El Cuadro) in Sanlúcar. It’s drawn from a small selection of toneles (750-litre butts) and botas of a quality that Barquín calls “outworldly”. These two-dozen or so casks have been carefully looked after by Eduardo Ojeda and his team for more than twelve years, and the wines have been getting more and more complex.

The estimated average age of this bottling is seven years (so, far older than the vast majority of Manzanilla on the market). Like all La Bota wines, this is en rama, so it has not had the aggressive filtration that gives most Manzanilla its clear appearance. This is what proper Manzanilla looks like with age when served from cask, i.e., pale and golden. The wine itself serves to remind you that Manzanilla is simply Fino, a Fino from Sanlúcar vineyards. A glass with roast chicken or pork sausage would be sensational.  




“The next bottling after the number 93 is the NV La Bota de Manzanilla 113, which has strong green olive and brine aromas, but it's going for a fresher style and profile, austere and dry and still aged seven years or so under flor. The palate is super dry and long. This is the follow-up to edition 93 that started this new path of more freshness and drinkability but respecting the authenticity of the wines. This is a bit tight, possibly because of the recent bottling. 5,000 bottles produced. It was bottled in June 2022.”

Saca de August 2022. This stunning Fino comes from the Macharnudo Alto (the ‘Grand Cru’ parcel within Jerez’s legendary Macharnudo vineyard) and was drawn from Valdespino’s Inocente solera. This will need no introduction to Navazos fans, as the same solera and vineyard brought you the fabled La Bota numbers 2, 7, 15, 18, 27, 35, 54, 68 and 91.

Of course, this is a single-vineyard wine (extremely rare in the world of Fino these days) from one of the four great pagos that lie to the north and west of Jerez. Dubbed the ‘Montrachet of Jerez’, the albariza chalk here—called Tosca de Barajuelas—results in low yields of thick-skinned grapes and a particularly fine, chalky, saline, structured Palomino. Macharnudo Alto is the most celebrated part of the vineyard, the parcel with the highest altitude and the one considered to have the purest albariza soils.

This time around, it’s a selection from the solera: the oldest casks for complexity, and the second criadera for freshness. This bottling was also blended with some younger criaderas from the Macharnudo Alto estate. Eduardo Ojeda (the Master) explains: “We are looking for particular finesse and freshness in this saca. The wine is now more fluid and fresher than in previous editions, without in any case losing its authenticity.” Its average age is close to eight years, a couple of years less than the previous bottlings. Food? Oysters, olives, anchovies, salted almonds, whitebait, charcuterie, prawns, hard cheese, etc. In fact, drink it with whatever you like, but with the aforementioned foods, you will be in heaven!

“The NV La Bota de Fino 115 is still 100% from Macharnudo Alto, and they are trying to make a slightly more fluid wine, not like a Fino Amontillado, which was the case with some bottlings coming from the selection of very old soleras. It's slightly different from the previous edition, number 91; this is slightly younger, between seven and eight years of age, but it keeps the same style, just a little more approachable. It's still an old Fino, with notes of esparto grass and volume in the palate. 6,000 bottles produced. This was bottled in August 2022 in 0.75-liter bottles.”

This prodigious wine comes from a fifteen cask solera that has become legendary to followers of Equipo Navazos. Nothing from this solera had ever been bottled until Equipo Navazos selected it in 2008 for its 10th release, followed by edition 20 "Bota Punta" and several more since. The singularity of the solera comes from barrels filled with Sanlúcar musts almost to the top, well above the customary 5/6 mark, leaving a thinner, more fragile layer of flor kept alive through scarce refills. Still functioning as a barrier against oxidation, though only partially effective, this gives the wine elegant oxidative notes and a rising alcohol level, above 16%. The average age today is around 13 years. A complex and powerful wine, with balanced freshness and elegant oxidation that make it truly unique.

"This is biological and with an oxidative twist, saline and marine and faintly nutty. For comparison's sake, we tasted from a bottle of the number 100 that had been opened for months, and it showed how Palomino and Sherry wines clearly benefit from time in the bottle, the cellar or the glass. It has a thin and wiry structure, muscular, with fiber but no fat. It's focused and harmonious with persistence and a bone-dry finish. 2,800 bottles produced. It was bottled in November 2024."

The result of combining "Bota Punta" with two other outstanding casks from the 1/15 solera, source of every "Bota Punta" and "Bota NO" edition since No. 20. This 120th La Bota edition continues the tradition, in place since No. 10 in 2008, of editions ending in zero being Manzanilla Pasada from Misericordia, in Sanlúcar de Barrameda. This is a very special wine, balancing finesse and chalky minerality with roasted nuts and dried fruit notes marking the start of "amontillamiento", bordering on Manzanilla Amontillada in style. Its distinctive character comes from butts filled to "a tocadedos" level, well above the usual 5/6 mark, leaving a thinner, more fragile layer of flor. This shows through in elevated oxidative notes and alcohol now above 16%.

The fourth release, following editions 52, 75 and 102, of a groundbreaking approach to the palo cortado style, the result of decades of work by Eduardo Ojeda and his team. Despite its relative youth, it honours the smoothness, purity and complexity that the category demands. But it's also a single-vineyard, vintage-dated wine, sourced from 2010 musts harvested in the legendary Pago Miraflores La Baja, Sanlúcar de Barrameda. The vines are 50 to 80 years old, and also gift the fruit that makes La Bota de Florpower. Aged in Sherry butts and barriques filled almost to the top to limit oxidation, this saca comes from the same barrels as edition No. 75. Fundamentally oxidative, with only slight biological ageing before fortification to 17.5% alc., this carries the typical saline minerality of Sanlúcar's coastal vineyards yet with an otherworldly complexity.

A powerful yet extremely elegant Palo Cortado, sourced from oxidatively aged wines (essentially fino where the flor has died early so the wine is fortified). This is a wine of remarkable finesse and expressiveness, with a very complex nose blending amontillado and oloroso aromas. Its origin lies in a selection made thirteen years ago among the finest casks of oxidative wine owned by Almacenista Juan García Jarana. Three previous releases preceded it: La Bota de Palo Cortado 34 "Pata de Gallina," bottled in 2012, La Bota de Palo Cortado 72 "Pata de Gallina," bottled in 2017, and La Bota de Palo Cortado 92 "Pata de Gallina," bottled in 2019. This marks the fourth saca from this small solera, locally called an "altarillo," or little altar, belonging to Equipo Navazos and held at Fernando de Castilla.

"Complex nose with burned brown sugar, ash, dark honey, vanilla and black walnuts. Round and full-bodied with a phenolic touch to the endless finish that goes on for two minutes. 20.5% alcohol. Drink now."

Saca de October 2018. This remarkable Montilla Fino is the heir to the fabled La Bota Nos. 24 and 45, and fans of those wines should not hesitate. This labelling is necessitated by the current, restrictive legislation but this is really a Fino that is moving towards being an Amontillado. Underneath, in small text, the subtitle “Un fino que va para Amontillado” translates as exactly that.

The wine is sourced from the oldest Fino solera at Pérez Barquero’s Bodega Los Amigos. Luis Gutiérrez’ note below tells you what to expect: a superb, unique, unbelievably intense wine. Think great La Bota Fino—with all the complexity, freshness, intensity and drive—but with a touch more glycerol fat and more dried fruit generosity and you won’t be far off the mark.

“The extraordinary NV La Bota de Fino 85 “Un fino que va para amontillado…” is not a wine from Jerez but from Montilla-Moriles in the province of Cordova, an appellation where the majority of vines are Pedro Ximénez and the wines produced are similar to Jerez wines. In fact, Amontillado means "in the style of Montilla," because the style originated there. This wine, from the same origin as edition 45 (and 24) that would be called Fino Amontillado if it wasn't forbidden, has taken biological aging under flor to an extreme, and the wine has started its oxidative aging on its way to becoming an Amontillado. So, it has the saline complexity of the flor and the incipient notes of nuts and varnish. As the wine sat in the glass and warmed up, the palate took off and revealed an unusual combination of power and elegance. This is really surprising and very good. 2,800 bottles were filled in December 2018.”

Another Fino on its first steps toward becoming an Amontillado. It's a 15-year-old wine sourced from the oldest fino solera in Pérez Barquero's Bodega Los Amigos. From here, twelve butts were selected that showed amontillado notes and yet preserved fino character. It remains a true fino, aged under a fragile layer of flor. It's a fascinating, deep and elegant wine, exceptionally versatile at the table. Bottled in November 2023, unfined and virtually unfiltered, its golden colour is the same as straight from the barrel.

Saca de October 2022. This iconic bottling can trace its ancestry right back to the first ever La Bota wine: La Bota de Amontillado No.1. Since that time, we have been regaled by those Sanlúcar wines numbered 9, 37, 58 and 95. This time there is a new source. Barquín explains that for La Bota 117, they travelled from Sanlúcar to Montilla—"looking for something new and because we had to take advantage of the opportunity of a spectacularly fine and lively Amontillado, delicious, fluid and at the same time with much character.”

Sourced from the venerable Bodega of Pérez Barquero, it is a wine of more than 20 years of age from Altos de Moriles. The solera started life as a Fino and during its first oxidative stage in a prestigious winery in Lucena. This was followed by its definitive period of aging at the Bodega of Pérez Barquero. In the Montilla tradition, the wine has never been fortified, and its alcohol content clocks in below 18% which contributes to its freshness on the palate.

It’s a wonderfully gastronomic wine that harmonises with a wide variety of dishes, as well as being a delicious glass in itself. It is best enjoyed in a large white wine glass at around 11ºC and 13ºC. An excellent aperitif, it also works beautifully with powerful meat-based entrées and is also a surprisingly good accompaniment to spicy Asian food and, of course, a wide variety of cheeses (both hard and soft). 

“The NV La Bota de Amontillado Montilla 117 is a new Amontillado from Montilla-Moriles that was never bottled before. Selected from the cellars of Pérez-Barquero, the wine is between 25 to 30 years of average age, not fortified but bottled at 20% alcohol from pure concentration from evaporation, as the Fino that is the base for this wine was never fortified, which is the tradition in Montilla. It's a medium-age Amontillado with textbook characteristics and the evolution of the Fino Amontillado but with some 10 to 12 years more. It's nutty, pungent, intense and sapid, with a saline, iodine twist.”

To mark the fifth anniversary of Equipo Navazos in 2010, Pérez Barquero allowed a super limited release of an extremely old "NO" Amontillado from Montilla. It was a wine of exceptional intensity, concentration and complexity that came from a row-end butt that had been resting for decades in Pérez Barquero's Los Amigos cellar. Very few bottles were produced. The privilege was repeated in 2017 with edition 73 "Bota Aniversario," and again in 2023 for this No.125 "Bota NO," drawing once more on the same venerable barrels. A truly impressive Amontillado, standing alongside the greatest traditional Andalusian wines, with an average age certainly over fifty years and almost certainly over sixty, from some of the oldest casks in the bodega.

"It's old and pungent, with bitterness but not painful. It has aromas of very old wine, iodine, rusty nails, low tide, varnish, nuts and seaweed. The salty/marine side is very noticeable, peaty and smoky too, and with a very powerful mouthfeel, tasty, long and salty. 1,300 half bottles were filled in 2023."

Navazos disciples will be well familiar with this wine, inspired by the time when Pedro Ximénez was often a vintage wine released without extended aging, and therefore without the resulting rancio characters that such maturation brings.

It is made in partnership with the highly regarded Pérez Barquero family in the D.O. Montilla-Moriles and derives from late-harvested and dried PX grapes from one of Montilla’s best vineyards. Fortification is carried out only with top-quality, grape spirit. After 18 months resting in traditional, large, cone-shaped amphorae (of the type used in Montilla-Moriles for centuries, locally called tinajas or conos), the wine is released as an ultra-pure, viscous, incredibly intense and naturally sweet dessert wine.

For those new to this wine, this isn't your opaque, black, rancio style of PX. Instead, you can expect a bright and perfumed, amber/brown coloured wine of wonderful vibrancy, fruitiness and freshness, with dried raisin, leatherwood honey, cold tea, nutmeg, molasses and fresh resin notes. Of course, with 430 grams of residual sugar, it is very sweet yet balanced by just the right amount of acidity. The wine can be consumed in the same way as an aged PX: served with coffee, tea or with chocolate desserts. Like Navazos’ solera PX, it will keep for aeons in the fridge.

La Bota 76 was just the second commercial release of this wine, drawn from an ultra-rare, 100% PX solera resting in Sanlúcar’s Marqués del Real Tesoro bodega (the first release was La Bota No. 11). This 12-butt solera was filled in 2000 with a very old P.X. that had been carefully selected from the stocks of a small Sanlúcar producer that was closing down. Since then, it has remained untouched, except for the two small withdrawals made by Navazos.

Estimated to have an average age of 30 years, this is a mind-blowing example of pure Pedro Ximénez produced in the Jerez style: fortified initially to 18.5% alc. and aged in butts filled only to 5/6 of their capacity (to enhance the complexity of oxidative notes). With time, the alcohol percentage has dropped to 16% alc. This beguilingly sweet wine can be enjoyed on its own or side by side with chocolate-based dishes. Serve on the cool side, so the temperature inside the glass can evolve from 12ºC to about 16ºC.

“A classical PX aged in the style of Jerez, more oxidative than the ones produced in Montilla-Moriles, the NV La Bota de Pedro Ximénez 76 "Jerez" has 370 grams of residual sugar and 16% alcohol after being aged for an average of 30 years in old 600-liter American oak casks, where some alcohol evaporated, as it was fortified to 17.5%. This was already bottled eight or nine years ago, with number 11. It has notes of carob beans, cocoa, licorice and toffee, not too dry, a little more oxidative and more developed. 1,800 bottles produced.”
