This Chardonnay comes from the eponymous Three Wishes site. It was picked in two passes – the first chasing freshness and verve, with the second hunting for that texture and depth. The result is a supremely balanced wine. The grapes were whole-bunch pressed into a mix of French and Austrian puncheons for wild ferment. It went through partial malo, and saw 11 months on full lees. It spent its last four months in tank where it rested before bottling. It shows a great “stony clarity” and “gentle umami” according to Dave Brookes. We have to agree, this wine is the bomb!
