This Pét Nat is 100% Chenin Blanc, sourced from a sandy-clay site in the Swan Valley. It was hand-harvested and whole bunch pressed into tank, where it fermented with natural yeasts. The wine was chilled to arrest fermentation once the desired sugar level was reached, then bottled by hand. The wine completed its second ferment in bottle.
