Bondar’s Fiano is sourced from Ben Lacey’s vineyard in Whites Valley (McLaren Vale). The vines are now eight years old, grafted onto 25-year-old Chardonnay rootstocks established in shallow, dark Biscay clay over limestone. Picked at the end of February, the 2021 spent just 16 hours on skins before it was lightly whole-bunch pressed into old oak and stainless steel. Fermented naturally, the wines remained on lees, unsulphured until June before being settled and blended in September.
Straw, golden delicious apple and crunchy pear noted wine with a fragrant, deliciously juicy personality. The finish is vibrant with sappy, cleansing freshness.
