Bondar’s Fiano is sourced from Ben Lacey’s vineyard in Whites Valley (McLaren Vale). The vines are now eight years old, grafted onto 25-year-old Chardonnay rootstocks established in shallow, dark Biscay clay over limestone. Picked at the end of February, the 2021 spent just 16 hours on skins before it was lightly whole-bunch pressed into old oak and stainless steel. Fermented naturally, the wines remained on lees, unsulphured until June before being settled and blended in September.
