This single vineyard, 100% Marsanne comes from a postage stamp-sized parcel of vines (0.2ha) west of Béziers at Capestang (in the Hérault). Though generous in texture, the wine's chiselled freshness comes from the cooler, north-facing aspect, the clay/limestone soils and sensitive canopy management. Picked on August 31st, this also includes some press wine, which firms up the structure, providing that mouth-watering, skinsy character that works so well at the table. Following a short period on skins, the wine was basket pressed, naturally fermented in old oak and raised for two winters in the same barrels. The wine goes through full malo. If you have not tasted this Marsanne, leave any preconceptions at the door.
