Dormilona Clayface Chardonnay 2022

The fruit was sourced from the stunning Burnside vineyard on the Western side of Caves Rd in Wallcliffe. The fruit was harvested by hand in the cool of the morning, then simply whole-bunch basket-pressed into a handmade Italian amphora. The wine fermented there naturally and was allowed to go through malo before it was racked - directly from the amphora to bottle.
