Fruit for the Yea Valley Riesling comes from the same well-established site as the Wickham’s Cabernet Franc, sitting on duplex clay just south of the Yea Valley. The Riesling vines are well over 20 years old, and the site is renowned for consistently high-quality grapes. When the opportunity came along to secure some, the Hoddles team didn’t hesitate.
The fruit is picked fresh in the cool, early morning. Once at the winery, it soaks for 12-14 hours before being destemmed and lightly crushed to the press. A portion of the juice was put to large old barrels for fermentation, with the balance sent to stainless steel. The lees were stirred once a fortnight and the wine was bottled at the beginning of August.
