Certified organic. This 100% Cabernet Sauvignon comes from the Old Block and Block 12, planted in '78 and '95 respectively. The vines sit on stony, gravelly soils with a clay subsoil which allows the vines to form deep and solid root systems. They are planted to the Houghton clone which is lower yielding and produces smaller berries. This clone also produces fruit that is less herbaceous, with more emphasis on blackcurrant and cassis. It has been the backbone of Margaret River Cabernet since it was brought over in the mid 1800s.
The growing season was perfect: warm and dry in Spring, with a mild January that steadied ripening, allowing the grapes to develop great phenolic ripeness. The grapes were hand harvested and destemmed to retain whole-berries. Each plot was seperately vinified in open top fermenteds with regular yet gentle pump-overs and plunging. The wines were also matured seperately for 18 months in French oak before blending and bottling in October 2021.
