This Cabernet comes from the Coastal Estate vineyards in the Stevens Valley in the Margaret River. The gently rolling, gravelly slopes of this seaside site enable these vines to produce beautifully balanced fruit in moderate yields. The 2025 season was warm and dry, with the grapes taking until April to reach phenolic ripeness. A late rain event did little to compromise the grapes, which were picked in stunning condition.
In the winery, the grapes were de-stemmed (but not crushed) and fermented as whole berries in a blend of open, static and concrete vessels. The ferment sat on the cooler side to keep the lifted aromatics and control extraction. This was complemented by gentle hand-plunging twice daily. The wine finished with a leg of maturation in 30% French oak and stainless steel tanks.
