This Chardonnay is drawn from Guffens’ own Tourettes vineyard in the Luberon, a limestone-rich terroir at 400 metres above sea level. Specifically, the fruit is from the Plateau de l’Aigle terroir, a rocky site that is also the source of Tourette’s ‘grand cru’ Tinus Chardonnay. Where Tinus is crafted from free-run juices, here Guffens selects the juice during pressing, keeping only the first pressings to preserve acidity to offset the wine’s natural flesh. This year the wine was fermented in used oak (80%) and aged for eight months on lees in a mix of concrete and used barrel.
