O Chao is one of Valdesil's two single-peza wines, the other being the Pedrouzos bottling from the iconic 1885 vineyard which is only offered in magnum. Both wines - when they are actually made (the 2013 Pedrouzos was wiped out by hail) - make only a single barrel each. The lion's share of estate's vines are planted on slate and schist, so O Chao is Valdesil's only parcel on granite based soils. The vines here were planted by the family in 1941 at 450 meters altitude. Slowly fermented with wild yeasts and raised in a single 500 litre French oak barrel, the wine is bottled unfined and unfiltered. The decomposed granitic sands of O Chao give the wine a pungent, smoky minerality, with a cooler fruit profile and some phenolic grip.
