Dash Farms planted N/S sits 490m up on Quartz and feldspar sand, or decomposed granite, planted in the late 1990's.
Harvested late for complex and satisfying fruit. Gently crushed and w.b pressed. Settled for a couple of days before wild fermentation in stainless steel and also a small portion of oak for the harder pressed portion. Long slow fermentation was stoped based on balance of suagr. Settled and filtered prior to bottling.
