From across a small valley, and higher up Castelletto, where Elveziano soils—rich in limestone, clay and fossil-laden marine deposits—bring both structure and mineral drive. Hand-harvested fruit was destemmed and fermented in temperature-controlled tanks with a short maceration of 7–9 days.
