The Nebbiolo vines sit halfway up the northwestern slope on the cone-shaped Denton site. The granite-rich soils, elevation and exposure―as well as the site’s long, slow ripening conditions―provide a suitable environment for such a marginal variety as Nebbiolo. The block is planted to several clones, with Mat 111 and Mat 9 used for this Shed bottling.
Half the fruit fermented in small open-top fermenters while the other half fermented in a plastic egg from Germany. The wine was pressed off skins early to preserve freshness and vibrant, fresh berry flavours, making it ideal as a slightly chilled summer red.
