Disgorged in October 2021. Opiniâtre translates as very opinionated or obstinate. First made in 2009, this was Sébastien’s inaugural no sulphur wine—something few producers were experimenting with at the time. As Sébastian says, he created this cuvée to show people that a great zero sulphur Champagne was a possibility; it could be both super pure and age effortlessly. As the estate has moved on and very little sulphur is used, he has decided to retire this wine as it no longer stands out as it once did. This release is 100% Verzy Chardonnay from vines planted in soils rich in clay, limestone and flint. The wine sees full malo, a 66-month élevage in oak and zero dosage.

“There are co-plantings of trees and bushes and bigger trees in and amongst the plots of vines. Mixing the agriculture of vines and other flora is the idea, to encourage biodiversity – now there are 1500 trees/bushes and some more aromatic plants (500 or so planted), existing within the vines. By the way, this is a blend of the eight best barrels made without sulphur. Amazing wine. So out of the box, but so layered and nuanced. Waxy texture, briny elements, green almond, crystallised ginger, pickled lime, alpine herbs and amontillado sherry faintly woven through. Stone fruits, some green apple, a splash of green pear. It feels almost nourishing, and just gently enlivened with the faintest brush and bristle of bubbles. Amazing energy too, despite the lower atmosphere of fizz. Utterly delicious. Serious. Cool. Compelling.”
