Disgorged in October 2022. Les Fervins is one of the most prestigious sites in Verzy, located in the second, silex-rich valley, close to the village of Verzy itself. Here Sébastian farms a small plot containing all seven varieties permitted in Champagne—Arbanne, Petit Meslier, Meunier, Chardonnay, Pinot Blanc, Pinot Gris and Pinot Noir—planted row by row. Mouzon was inspired by his visits to Marcel Deiss in Alsace, who has long focussed on field blends to produce wines that reflect the terroir on which they are grown more than the individual grape variety.

Planting row by row allows Mouzon to harvest everything on the same day and press the same quantity of each grape variety. For example, if he has 300 kilograms of Petit Meslier and 600 kilograms of Chardonnay, he will still take 300 kilograms of each grape variety to maintain the proportional balance during vinification. The wine is vinified in barrel, aged in 4–5-year-old Louis Jadot barrels for five years, and bottled with zero dosage.
