Avizoise is sourced from vines of up to 60 years of age, situated in the clay-rich (argilo-calcaire) Côteaux d’Avize vineyards of Les Robarts and Les Gros Yeux. The richer soils of these neighbouring sites give a deeper, even more powerful and textural expression of Avize than found in the Minéral. The wine was aged entirely in 600-litre demi-muid, and the fermentation in bottle was carried out under cork rather than crown seal. The 2014 spent a minimum of 72 months on lees and was dosed at three grams per litre.
