The step up in price here is due to the rarity of the base wines, which are sourced from both late harvest Gewürztraminer and a rare example of Gewürztraminer Eiswein! These premium wines bring full-bodied sweetness and aromas of dried peach and orange but also refreshing, crystalline acidity. But let’s not forget that this is a vermouth first and foremost and the wormwood macerates deliver the delicate, integrated, bitter punch, accentuated by a complex, 20-strong botanical mix (including anise, cardamom, coriander, cloves and orange peel) which brings loads of herbal and spicy notes that balance the vermouth’s natural sweetness.With a discernibly fresher, fruitier personality than its peers in the market, there are subtle, well-poised flavours of almond meal, white grape, honey and orange. Again, Belsazar White makes a terrific long drink with Light Tonic and a citrus wheel garnish, yet is equally primed for use in modern classics where a measured hit of botanical bitterness is called for. In essence, it works like a red vermouth, pairing well with base spirits from tequila to gin.
