Using a variation of their brilliant, over-proofed Macedon Dry recipe, the team steep their home-grown Davidsonia plums—commonly known as the Davidson or Davidson's plum—for a lengthy 18 months, in order to ensure they’ve extracted the maximum flavour, character, depth and complexity from this unique Australian fruit. And they've clearly nailed the recipe—their own stocks sold out online in under two hours.With a distinctive palate of sour plum, raspberry and feijoa rounded out by the juniper, citrus and classic spice of Animus’ Macedon Dry Gin base, this unique expression is delicious neat, with a dash of soda and squeeze of lime, or as a base for a range of distinctive fruit-driven gin cocktails.
