In the local patois Sabrego refers to granite. In this experimental cuvée, Mateo wanted to highlight the effect of this rock type on Doña Blanca. It comes from a vineyard planted in the granitic sands at 440 metres altitude in the sparsely populated Oímbra region on the Portuguese border. This wine is raised on lees in stainless steel only, before being bottled unfiltered.
