Production of the Blanc de Noirs started in 2018. Peter Dredge explains that Pinot Noir takes on lees characters quicker than its Chardonnay counterpart, so his Blanc de Noirs will always come from younger vintage. The fruit was sourced from Meadowbank sites deemed to have characteristics conducive to the production of quality Pinot Noir sparkling wine. The 2016 came from a northeast-facing block on a rolling five-degree slope that provided Dredge with his desired balance between ripeness and acidity.


Like the Blanc de Blancs, this was whole-cluster-pressed. Only the first two-thirds was taken for the traditional method wine, while the balance was used for the earlier-released Harvest Sparkling. It was fermented and raised in used French oak for three months, then rested on lees before being disgorged with two grams per litre dosage in late 2021.

It’s a little wild and flavoursome, no shortage of character, very subtle bubbles, a most gentle prickle here, saline and savoury, with a woodsy finish of good length, and a brick dust texture to close. In a way, I like it more than the 16 BdB for its charisma and point of difference. I really like this!”

100% pinot noir from estate vines planted 1987 in the Derwent Valley; whole-bunch pressed; fermented in 6 French oak barriques; aged 3 years on lees; disgorged September 2021; 4g/L dosage; 100 cases. A full straw hue with a faint blush tint anticipates the full presence and purity of pinot noir, laden with crunchy, spicy red berries of all kinds. The tension of the Derwent whistles through a tense palate of brittle acid drive, nicely framed in the creamy texture of barrel fermentation, yet screaming out for a full decade yet to find peace and calm. Craftsmanship with endurance.
