Transcontinental Rum Line Fiji 2014

Line #23, Pure Single Rum (pot still). Natural colour, non-sugared. South Pacific Distillery was established in 1979 on the island of Fiji. The rich volcanic soils allow for the sugar cane material to be grown organically. Moreover, the cane on the distillery’s plantation is still cut by hand, which leads to a richer cane juice with fewer tannins. 

Distillation was in pot stills from fermented molasses, then this batch spent just over two years aging on the Fijian archipelago and was finished in Europe for over one year before it was bottled.
