L’Angélique is Sébastien’s racy, chalk-carved Blanc de Blancs; a wine with tighter structure and more precision than is usually associated with Montagne Chardonnay. It is a 100% Chardonnay Blanc de Blancs sourced from between four and eight sites in Verzy, depending on the year. These sites sit in the eastern, chalky section of Verzy Grand Cru and in the middle valley; his coolest vineyards where the soils are one metre deep. The wine underwent full malolactic fermentation, 60 months élevage and, in 2018, was bottled with zero dosage.
As its name suggests, Sébastien seeks a degree of lightness and purity to match the grape’s pulpy chewiness. It’s another superbly vinous wine from Mouzon with layers of orchard fruits, sweet citrus, and summer florals. It’s powerfully flavoured, with drive and minerality aligned to a creamy texture, crystalline acidity and a touch of grip. It’s powerful yet delicate, the bead is very fine – it’s focused, composed and very delicious.
