While previous releases of Splendido were made in the pét-nat style, Quealy transitioned to the traditional method from 2021 onwards. The team felt this approach would better capture the precision and clarity they envisioned—and the results suggest the decision was spot on.
Bottled in crown seal, the 2024 release is crafted entirely from Moscato Giallo grown in Quealy’s organic Balnarring vineyard, picked early at 9 Baumé to preserve its aromatic lift and vibrant acidity. The fruit was gently pressed to low yields, resulting in delicate aromatics and a finely poised palate. After settling, the juice was racked to commence fermentation, then tiraged and bottled for secondary fermentation. Disgorgement was carried out by hand, with no addition of sulphur or dosage.
The result is a youthful, expressive sparkling wine—fresh, finely detailed, and effortlessly drinkable, with an energy that truly enlivens the palate.
