The Aux Craz fruit is from a south-facing vineyard that lies under the Col de Durbize at the top of the village. At 460 metres, the poor, thin soils mean the roots of Passot’s single hectare of 40-year-old vines need to penetrate the rock below. Here, the elevation and cooler microclimate tempers ripening, bringing cut and crispness to the wine’s fruit. Winemaking is as above, with 11 months maturation in cuve beton before bottling.
