While the Yarra Valley is best known for Chardonnay and Pinot noir, Denton tends a tiny 0.4-hectare plot of Ribolla Gialla—a variety made famous by Gravner in Friuli—planted before the Bishop family took over the vineyard in 2024. Fruit was hand-harvested and destemmed, with spontaneous fermentation on skins for 60 days before gentle pressing to stainless steel, a process Denton plans to evolve with amphora maturation in future vintages. The 2023 is the richest expression of the site so far.
