While the Yarra Valley is best known for Chardonnay and Pinot noir, Denton tends a tiny 0.4-hectare plot of Ribolla Gialla—a variety made famous by Gravner in Friuli—planted before the Bishop family took over the vineyard in 2024. Fruit was hand-harvested and destemmed, with spontaneous fermentation on skins for 60 days before gentle pressing to stainless steel, a process Denton plans to evolve with amphora maturation in future vintages. The 2023 is the richest expression of the site so far.

Proper texture, chalky and grippy, a nutty savouriness and pleasing bitter citrus character on tart apricot, pickled ginger, fuzzy peach skin, white pepper and garam masala spice. Exotic in a way, but with a nod to more gentle and approachable orange wines of Oslavje. Quietly complex, distinct in its lean into the impact and volume that skins provide to these white grapes. Delicious and refreshing too. In the zone, fantastic drinking, and to stutter, proper."
