"Sourced from a single grower on the East Tamar, near our Three Wishes site at Hillwood. The fruit came in later this year and was gently direct-pressed to tank. Winemaking was deliberately simple, with a focus on preserving purity and achieving a clean, classical expression of Pinot Gris. The wine rested on lees for several months before blending, then settled again ahead of bottling. Paler in colour than last year, yet still generous and expressive in flavour." Winemaker note

"The 2025 Pinot Gris is textural and white-fruited, with pineapple crust, white pepper, green apple skin and preserved lemon brine, with wax and white flowers as well. This is good. I like Tasmanian Pinot Gris. The best have a chalky texture, sometimes a little bit of a blush color and plenty of flavor on the palate. They retain a sense of class too, so they come recommended.
