Sobre Lías—the Spanish equivalent of ‘on lees’—is drawn from a range of estate-owned parcels (30-year-old vines, on average) grown on the grey slate soils of the hillsides of Vilamartín de Valdeorras (around Córgomo and Portela). The fruit sees six hours of skin contact, natural yeast fermentation and six months aging on lees.
