Stéphane's Chablis is drawn from 20+ year-old vineyards in Préhy, in the cool south of the Chablis canton. We haven't yet tasted Moreau's single-vineyard 2014s, though this villages wine gives us a pretty good indication of what's in store; elegant and energetic wines full of ripe acidity and mineral grip. Moreau's Petit Chablis and Chablis are raised entirely in tank, it's not until the Vieilles Vignes level and above that Moreau incorporates oak matured parcels. However, 18 months élevage here is considerably longer than the vast majority of wham-bam-thank-you-ma'am Chablis, and the wine spends this whole time on lees, so you still find the textural authority we have come to expect from this Domaine.
