The gently rolling, gravelly slopes of this seaside site enable these vines to produce beautifully balanced fruit in moderate yields. The 2025 season was warm and dry, with the grapes taking until April to reach phenolic ripeness. A late rain event did little to compromise the grapes, which were picked in stunning condition.\u003c\/p\u003e\u003cp sugg=\"true\"\u003eIn the winery, the grapes were de-stemmed (but not crushed) and fermented as whole berries in a blend of open, static and concrete vessels. The ferment sat on the cooler side to keep the lifted aromatics and control extraction. This was complemented by gentle hand-plunging twice daily.
