The grapes are mostly whole-bunch pressed, settled overnight, and run to oak the following morning, with fermentation carried out predominantly in 500L casks (including a small portion of new oak).\u003c\/p\u003e\u003cp sugg=\"true\"\u003eSite and fruit profile dictated the level of solids in each parcel, while a greater share of the blend went through malolactic conversion in 2025, lending an extra lick of richness and breadth.
