This year, Shiraz accounts for 60% of the blend, with the balance equal parts Grenache and Mourvèdre. Each parcel was vinified separately in small, open-top fermenters, using whole-berry fermentation and daily plunging. The wines were then pressed to 500-litre puncheons for 12 months’ maturation, followed by a second year in 100-litre foudres. One of Bryan’s preferred bistro reds is the Syrah-dominant Guigal Côtes du Rhône.
