The fruit is sourced from two vineyards (Bit of Heaven and Grove) in Hilltops in Canberra District, a region with which Martin has a particular affinity. The soils vary, but there’s a common thread of granite with seams of windblown clay sediments and a similar elevation of 500-600 metres. The fruit fermented on skins in 10-hectolitre oak cuves for four months.
