Made in the style of a mini grower Champagne, the must fermented wild in stainless-steel tanks and spent 12 months on lees after the secondary fermentation. Bottled undosed, it shows spicy apple and pear, typical of the local Mauzac variety, with flecks of salty lemon and a lick of sourdough and grilled almond.
