The majority is destemmed (10% bunches retained), chilled overnight and after three weeks of fermentation, the wine matures for 11 months in a single 1800-litre foudre.\u003c\/p\u003e\u003cp\u003eJasper’s notes: The wine is bright, acid-driven and red-fruited with cherries and spice on the nose.
