The grapes were harvested by hand during the third week of September 2023. The bunches were crushed and fermented whole (including stems). Each plot fermented separately with indigenous yeasts in stainless steel tanks. The fruit spent 12–15 days on skins with daily pumpovers. The wine was racked to tank, where malolactic fermentation kicked off over a 20- to 30-day period. The wine was racked again and allowed to settle before bottling in December 2024.
