The Dijon clones were harvested together, leaving the mystery clone to hang for another week. The Dijon clones see whole bunch ferments, whilst the mystery clone is entirely destemmed. The wine saw 11 months in seasoned French oak to finish things off. The attention to detail with each clone, and customised winemaking means this wine is anything but formulaic or generic. It spent its last four months in tank where it rested before bottling. It shows a great “stony clarity” and “gentle umami” according to Dave Brookes. Ricky again used a bespoke approach, with lots of small ferments kept separate until a careful selection of barrels made the final blend.
