Once the ferment begins, each vessel is plunged by hand once a day until the ferment reaches its peak, at which point the vessels are sealed. Once fermentation is complete, the vessels are topped, resealed and left alone for seven months. The wine is then pressed off skins, returned to vessel and left for four months. Finally, the wines are stirred and sent to one-year-old, 30-hectolitre Stockinger barrels for 12 months before release. ","brand":"Ravensworth","offers":[{"title":"Default Title","offer_id":47979636424942,"sku":"23440-750","price":27.0,"currency_code":"AUD","in_stock":true}],"thumbnail_url":"\/\/cdn.shopify.com\/s\/files\/1\/0620\/7468\/3630\/files\/e35062f9-521d-ef11-ac43-02c0c1c8e708_23440-750.png?v=1777863903"},{"product_id":"ravensworth-hilltops-nebbiolo-2023","title":"Ravensworth Hilltops Nebbiolo 2023","description":"\u003cp class=\"richp\" sugg=\"true\"\u003e2023 was a cool, super-long year - perfect for Nebbiolo.
