While most rossos are typically made with a base of white wine, before colourings such as caramel are added, the Chazalettes Vermouth Rosso uses the Bava family’s own Barbera as the base wine, with a touch of Nebbiolo. “You get a very different reaction between the red wine and the extracts,” says Roberto Bava, “The tannins [in the wine] react to the spices and bitterness and evolve in a different way over time.” The resulting Vermouth has a richer colour and a more solid chewiness to the flavour than modern examples. Alongside Piemonte wormwood, the resurrected 1876 recipe takes in Piedmontese herbs, marjoram and musk mallow alongside more far-flung botanicals in sandalwood, mace, galangal, clary sage, cinchona bark and coriander. Each botanical is individually prepared, with the maceration time ranging from a few days up to many weeks. The Massolino family are the largest holders in Vigna Rionda with 3.5 hectares (two planted to Nebbiolo) of vines between 40 and 50 years old. The soil here is similar to the Parafada vineyard (limey/chalky marls), yet it is deeper again, with more chalk and a higher concentration of minerals and oxidised iron elements. The altitude is 330 metres above sea level, and the protection from northern winds and frost that the south/southwest aspect affords means that Vigna Rionda has a longer growing season than the other Crus.

All these factors combine to produce a terroir that generates wines with an optimum balance of perfume, finesse and structure rarely found elsewhere in Barolo. The consistent quality of this wine—its purity, silky texture, fine tannins and balance—can only come with perfectly ripe fruit from top sites. In this case the sites are also high-altitude, which brings added freshness to the layers of fruit. From estate vineyards in Monforte d’Alba, Sandrone draws from Castelletto and Cascina Pe Mol. The latter sits at the top of the ridge leading from Monforte d’Alba to the hamlet of Perno and is among the highest vineyards of the region. In Novello, the fruit comes from Rocche di San Nicola and the whitish marls of Ravera—where the easterly exposure contributes perfume and aromatic complexity. There is some history here: when Luciano Sandrone was starting off, he was driven to produce greatness, yet he could only access a limited quantity of Barolo vines. He therefore channelled his drive and energy into his Dolcetto (and Barbera). This helps explain the ridiculous quality on offer.

//cdn.shopify.com/s/files/1/0620/7468/3630/products/3441adf2-03fd-ec11-ab3d-0ac90280dbea_20296-750.png?v=1658787377
//cdn.shopify.com/s/files/1/0620/7468/3630/products/7c8d1530-6218-ed11-ab3d-0ac90280dbea_20299-750.png?v=1660281225
albino-rocca-barbaresco-ronchi-2021
Albino Rocca Barbaresco Ronchi 2018

This celebrated, limestone-rich, Barbaresco Cru runs along the southern belt of the appellation, near the town itself. The Rocca cellars are located just above this southeast-facing vineyard—one of the reasons the site has become synonymous with the name Albino Rocca. Ronchi is also the oldest and largest holding of the estate, extending to almost six hectares (three of Nebbiolo)—roughly a third of the total area of the Cru. With Rocca’s Nebbiolo vines now aged between 50 and 70 years, this is a vineyard that offers an ideal combination of vine age, deep clay and limestone soils, and south-east exposure.

//cdn.shopify.com/s/files/1/0620/7468/3630/files/2f193916-fdfc-ec11-ab3d-024d026f405e_20348-750.jpg?v=1764135136
//cdn.shopify.com/s/files/1/0620/7468/3630/files/88c1c417-8c17-ed11-ab3d-0ac90280dbea_20349-750.png?v=1764135386
albino-rocca-barbaresco-montersino-2018
Albino Rocca Barbaresco Montersino 2018

The Montersino Cru is located at the southern tip of Barbaresco, close to Treiso at 320 metres above sea level. The Roccas’ 0.42-hectare parcel is within the highest and coolest area of Barbaresco and is one of Barbaresco’s most elevated plots. The south-facing vines were planted in 1998 by Angelo Rocca and are rooted on very poor clay and limestone slopes with thin layers of sandstone. The sandstone brings finesse, as does the altitude. Daniela Rocca has pointed out that this soil type (locally called Formazioni di Lequio) resembles Barolo’s Monforte and some of the chalky soils found in Serralunga.

//cdn.shopify.com/s/files/1/0620/7468/3630/files/b28b95e1-fcfc-ec11-ab3d-024d026f405e_20350-750.png?v=1764135383
