The Delaille brothers have focused their attention on growing fresh, lively Sauvignon Blanc, deeply rooted in the sand, clay, and limestone plains of north-eastern Touraine. Gilbert and his sons have also made their own contributions to the heritage of the Domaine, including the introduction of sustainable farming practices into the vineyards, as well as temperature-controlled vinification equipment to the winery. Having worked with the Unique Sauvignon for a handful of years now, we have turned our attention to Salvard's terrific value AOC Cheverny wines. L'Heritiere is Salvards funky old-vine/low yield bottling. As with the regular Cherveny it's roughly 85% Sauvignon Blanc and 15% Chardonnay, all hand harvested, from the Estate's oldest, limestone rooted vines. Both varieties are barrel fermented separately before blending and it is bottled unfiltered. It was Hans-Günter Schwarz (the legendary cellar master who made the wines here from 1962 to 2002) who brought Rieslaner to Müller-Catoir and planted it in the Haardt’s Herzog vineyard. Schwarz made some fabled sweet wines from Herzog Rieslaner (which are nigh-on impossible to find), and since 2003, Franzen has enthusiastically taken up the torch.

Rieslaner’s inclination to botrytis (even in dry years) while retaining high acidity makes it Müller-Catoir’s most reliable sweet wine variety. Seeing the success of the Rieslaner in Herzog, Müller-Catoir used mass-selection cuttings to plant in the Gimmeldinger Schlössel, a vineyard on poor sandstone lying at the foot of the Haardt Mountains. The results have been equally spectacular. The back-vintage wines have been re-issued from the domaine this year and will surely live up to their legendary billing.
Alcohol 6.5%; acidity 19.3 g/L; residual sugar 335.4 g/L.

//cdn.shopify.com/s/files/1/0620/7468/3630/files/35f74cc2-f424-ee11-ac3c-0aa7bbf44e76_21911-375.png?v=1689649701
colet-navazos-extra-brut-reserva-2008
Colet-Navazos Extra Brut Reserva 2008

The Sergi Colet/Equipo Navazos partnership started in 2003 when the two producers began discussing the parallels between Sherry and Champagne (chalk soils, the significance of reserve/aged wines, etc.). After two decades resting in the cool of the Bannockburn cellar, the wine has aged gracefully into a mature, deliciously savoury Victorian Shiraz balanced by a freshness that belies its age. These extraordinary unicorn wines are more nectars than anything else. They are produced only a few times per decade in homeopathic quantities. Indeed, Eszencia was historically sold in apothecaries due to its health benefits! For this style, the Aszú (botrytised) grapes are collected berry-by-berry and left to rest in a wooden keg for 15 to 20 days without crushing. Only the weight of the berries themselves helps get the process moving.

So here we have the free-run juice of handpicked, 100% botrytised Furmint berries drizzled into 50-litre demijohns and left to ferment naturally in the estate’s dark cellars. The fermentation is languid, to say the least, with the highly concentrated, syrup-like liquid fermenting over many years. Eszencia can take up to four years to achieve a modest alcohol level of 2–3%, although many wines struggle to make it to even 1% ABV (only a micro-fermentation occurs on the top of the nectar). As you can imagine, it is rarely sold commercially! While the residual sugar level must be at least 450 g/L, levels of 900 g/L or more are not unheard of. Yet even considering the huge sugar content, these staggeringly pure nectars somehow remain mesmerisingly poised.

The 2007 release—all 920 half bottles—clocks in at 1% (!!) alcohol with 681 g/L residual sugar and 11 g/L acidity. With all respect to the tasting notes below, trying to describe these wines in words is futile; every time you take a sip, something new emerges. All we can say is that a drop or two on the tongue is all it takes to flood the senses with extraordinary, once-in-a-lifetime aromas and flavours. The intensity is otherworldly.

While this exquisite nectar is ready to drink, it could easily go on forever! It is best served lightly chilled at 15°C, and thanks to its high natural sugar content, it can be stored in the fridge for years after opening the bottle. As for pairing suggestions, Eszencia is best savoured on its own with your nearest and dearest. Finally, the nectar is so intense, it is served in small portions, traditionally in a crystal spoon. Disznókő has commissioned the ‘Eszencia Angel Glass’, pictured below, and we can offer four of these spoons, free of charge, with each bottle purchased.
<grammarly-desktop-integration data-grammarly-shadow-root="true"></grammarly-desktop-integration>
//cdn.shopify.com/s/files/1/0620/7468/3630/files/f9bc4e0d-c618-f011-ac42-02954333b573_22479-375.png?v=1744590358
toro-albala-don-px-2002-375ml
Toro Albalá Don PX 2002 (375ml)

Toro Albalá reserve select lots of their best vintage wines for later release.
