In short, it’s a Champagne that can stop drinkers in their tracks. The 2019 is a spellbinding release built on energy and crystalline tension. Although it drinks beautifully on its own, it has the depth to go with smoked or grilled salmon. Yes, do that—you won’t regret it! This bottling was disgorged with a discreet dosage of three grams per litre. He used mass-selection cuttings from Anselme Selosse’s vines (in Avize) and Vincent Dauvissat’s Valmur Grand Cru vineyard. This plot has become the base of what Antonio Galloni calls “one of the most beautiful and distinctive wines in Champagne”. As of 2020, the cuvée also includes fruit from the Fonnet vineyard as well as Vouette itself, which was previously planted to Pinot Noir before replanting to Chardonnay several years ago.  \u003c\/p\u003e\u003cp\u003eIndigenous yeasts ferment the wine in used 500- and 600-litre barrels, with a small portion fermented and raised in Georgian amphora (see Textures). For the record, the Biaunes vines yield only 15 to 20 hl\/ha each year, which is key to the depth and mineral intensity on offer. Guiberteau’s other vineyards are classified as Saumur, so this wine marks Romain’s first Saumur-Champigny. Of course, Chacé will be well known to lovers of Clos Rougeard. This town is where Rougeard has its cellars and is home to its most famous vineyard, Le Bourg. \u003c\/p\u003e\u003cp\u003eIn 2016, Guiberteau purchased a quarter of a hectare of old, 1948-planted Cabernet Franc vines rooted in sandy-silt soil over limestone. Bottled only in magnum and limited to less than 1,000 bottles, the idea is to label this wine as Chacé only in exceptional years. In good years, the wine will be labelled Saumur-Champigny and bottled in 750ml. \u003c\/p\u003e\u003cp\u003eRomain calls this old vineyard un lieu spécial, and judging by his first release, he is really onto something. The full maturation, using one- to two-year-old barrels, takes the best part of three years, and the wine rests for a further 24 months before release. We’re trying not to mention the B-word, yet this is very ‘Pinot’ in its floral-berry scents and silky entry. Framed by powdery, almost invisible tannins, the palate is infused with gorgeous red and blue berries and a trace of classy oak before tapering to a very long, mineral and chalky close. These wines are already thrilling to taste but will continue gaining depth and complexity for decades. “Overall, I think 2022 is a Spätlese vintage for us,” says Katharina Prüm. “I was really taken aback by how all wines remained so fresh and with good acidity despite the heat of the vintage. In this sense, 2022 reminds us of 2020. It’s finer, even more complete and subtly powerful—a wine of obvious Grand Cru class. When you think of what we are paying now for top-notch Grand Cru white Burgundy wines, Weil’s remains an absolute bargain, matching the best of them for class and quality. In his Barbaresco MGA, Alessandro Masnaghetti explains that “the combination of soil, stature and exposure creates one of the greatest vineyards of the Langhe”. Sadie has a sorting team of 25 who discard 8 to 15% of the fruit each year. The grapes go into a huge open fermenter for an average of three weeks on skins before being basket-pressed into primarily old French oak barrels (less than 5% new). After a year on lees, the wine is racked into seasoned oval casks (foudres) for further maturation on the fine lees. The wine is then bottled without fining or filtration.\u003c\/p\u003e\u003cp\u003eA quick note on the history and evolution of this wine. The wine was a predominantly Syrah blend with Mourvèdre in its first decade. Over the years, specifically since 2009, Sadie has introduced ever-increasing amounts of the other varieties. The fruit is also picked earlier, and the winemaking has progressed. Before 2009, the style was geared towards power and extraction, maximising depth of colour, flavour and tannin. Post-2009, the maceration has become progressively gentler to the point where the cap is simply kept wet, mainly via handheld jugs. The amount of new oak has also decreased radically. It is no coincidence that these changes happened around the same time that Sadie was experimenting with similar techniques at Terroir al Límit in Priorat. \u003c\/p\u003e\u003cp\u003eColumella is nonetheless a more powerful, complex wine than those in the District Series, with unforced intensity and a corresponding increase in texture and ripeness. So much finesse, so much perfume, so much intensity and length. There is great potential here, yet the wine is already so delicious, with ribbons of sweet, complex fruit shot through with ultra-fine tannins, complexed by smoke and loads of spice. It has excellent structure and freshness yet tremendous elegance. Give it some air, or some time in bottle, and you will be amazed at what is being delivered at this price point. And don’t be scared to age it 5 to 10 years.
