In fact, the vineyard is a co-planted blend of 90% Pinot Noir and 10% Pinot Gris, with both varieties contributing to this wine. The grapes were allowed to macerate for a period before the juice was drawn off, providing the colour and much of the body and flavour for the wine. This saignée technique is now rare in Champagne, primarily as it is a demanding method of vinification and it requires grapes with an excellent degree of maturity. Most rosé in Champagne is made by the addition of a little red wine. Vive la difference!\u003c\/p\u003e\u003cp class=\"richp\"\u003eAs with all Larmandier’s wines it was naturally fermented. Part of this cuvée was raised in a Nomblot concrete egg and part in stainless steel, and more recently Larmandier has been also trialling amphora designed by Mizel Riouspeyrous from Domaine Arretxea. \u003c\/p\u003e\u003cp class=\"richp\"\u003eIt’s one of Champagne’s wow wines, repeatedly compared to a Chambolle-Musigny. In short, it’s a Champagne that can stop drinkers in their tracks. The 2019 is a spellbinding release built on energy and crystalline tension. Although it drinks beautifully on its own, it has the depth to go with smoked or grilled salmon. Yes, do that—you won’t regret it! This bottling was disgorged with a discreet dosage of three grams per litre. While both are extraordinary, the stylistic contrast is clear as day. This plot has become the base of what Antonio Galloni calls “one of the most beautiful and distinctive wines in Champagne”. As of 2020, the cuvée also includes fruit from the Fonnet vineyard as well as Vouette itself, which was previously planted to Pinot Noir before replanting to Chardonnay several years ago.  \u003c\/p\u003e\u003cp\u003eIndigenous yeasts ferment the wine in used 500- and 600-litre barrels, with a small portion fermented and raised in Georgian amphora (see Textures). For the record, the Biaunes vines yield only 15 to 20 hl\/ha each year, which is key to the depth and mineral intensity on offer. It’s finer, even more complete and subtly powerful—a wine of obvious Grand Cru class. When you think of what we are paying now for top-notch Grand Cru white Burgundy wines, Weil’s remains an absolute bargain, matching the best of them for class and quality. As you might expect, the original terroir (widely considered the finest part of the Clos de la Roche appellation) makes different wines from the surrounding sites now included in the AOC. Domaine Ponsot owns almost three hectares of this original 4.5-hectare clos. The rest of Ponsot’s holdings are within the Monts Luisants lieu-dit (which has always been bottled and sold as Clos de la Roche as it has the same soil, though it sits higher on the slope). The grapes from Monts Luisants add freshness to the natural power of the fruit from the original clos.\u003c\/p\u003e\u003cp\u003eTerroir aside, this wine is the reference point for the AOC. To us, it is not only Ponsot’s grandest wine but also one of the greatest reds in Burgundy. In his Barbaresco MGA, Alessandro Masnaghetti explains that “the combination of soil, stature and exposure creates one of the greatest vineyards of the Langhe”. Many of the Syrah vines have been trained to their stake (échalas style, per Northern Rhône). \u003c\/p\u003e\u003cp\u003eMost of the fruit is destemmed, although an increasing percentage of bunches are used each year. Sadie has a sorting team of 25 who discard 8 to 15% of the fruit each year. The grapes go into a huge open fermenter for an average of three weeks on skins before being basket-pressed into primarily old French oak barrels (less than 5% new). After a year on lees, the wine is racked into seasoned oval casks (foudres) for further maturation on the fine lees. The wine is then bottled without fining or filtration.\u003c\/p\u003e\u003cp\u003eA quick note on the history and evolution of this wine. The wine was a predominantly Syrah blend with Mourvèdre in its first decade. Over the years, specifically since 2009, Sadie has introduced ever-increasing amounts of the other varieties. The fruit is also picked earlier, and the winemaking has progressed. Before 2009, the style was geared towards power and extraction, maximising depth of colour, flavour and tannin. Post-2009, the maceration has become progressively gentler to the point where the cap is simply kept wet, mainly via handheld jugs. The amount of new oak has also decreased radically. It is no coincidence that these changes happened around the same time that Sadie was experimenting with similar techniques at Terroir al Límit in Priorat. \u003c\/p\u003e\u003cp\u003eColumella is nonetheless a more powerful, complex wine than those in the District Series, with unforced intensity and a corresponding increase in texture and ripeness. We recommend decanting, and Sadie suggests a minimum of eight years in the cellar before opening. Good luck with that! Bottled with just 13.2% alcohol, it has the finesse, sappiness and vibrancy of great Burgundy (from a powerful year) and the depth and structure to live for decades. The wine opens with loads of red fruits, gentle bunchy goodness, some sweetness and all kinds of flowers. A wine built on perfume!  It changes quite a bit with air, building depth and dialling up the dark cherry and spice. In short, don’t be in a rush and give it plenty of air. It really made us think of top, old-vine Chambolle—as though Roumier made Barolo! So, time on skins varied from 15 days to up to three weeks. Total time in oak was 20-22 months, and the wine was, as always, bottled unfiltered. \u003c\/p\u003e\u003cp\u003eIt’s hard to remember a time when a young Le Vigne tasted so alluring out of the gates. The vines run north-south along the slope, a rare orientation only found in approximately 1% of Burgundy’s vineyards. This is designed to prevent erosion but also changes the impact of sunlight and the shading on the vines. \u003c\/p\u003e\u003cp\u003eOrganic growing methods are the rule here (now certified) and renowned soil scientist Claude Bourguignon has consulted for some time. Although the clos has a regular, east-southeast aspect, the clay\/limestone geology is very complex with six different expressions of limestone found across the vineyard–the most prominent being calcaires à entroques, white marl and hard Prémeaux limestone. \u003c\/p\u003e\u003cp\u003ePicking started on the 20th of September this year—almost a full month later than in 2020—and lasted five days. Yields were a very low 20 hl\/ha, reflecting the poor flowering and the season. Extraction was very gentle: one early foot treading of the cap and then only pumpovers. The wine spent three weeks on skins and aged for 22 months before bottling. Noli has reduced the level of new oak down to 65% (from 100% not so long ago). Only the best batches made it to the final blend, which ended up being roughly 55% whole bunches. As always, the wine was hand-bottled by gravity without fining or filtration.\u003c\/p\u003e\u003cp\u003eDespite the challenging year, this is a truly great Clos de Tart and, from memory, is showing better as a young wine than any examples I have tried.
