It's made from 70% Pinot Gris and 30% Riesling from the western slopes of Leanganook on Mount Alexander. Here, Pat’s Dash Farm vineyard sits at 475 metres on quartz and feldspar sand. The vines were planted in the late 90’s, and at nearly 30 years old, they pack some punch.\u003c\/p\u003e\u003cp sugg=\"true\"\u003eThe grapes were left to ripen on the vines a little longer to develop that phenolic ripeness and fruit generosity. It was destemmed and cofermented in 3700L cement on skins. “Cofermenting give us complex perfumes, acids, and phenolics,” Pat says. After four weeks, the wine was drained (not pressed) off skins and sent to oak puncheons for a short elevage that moved onto stainless steel. Direct pressed to Rosé with the latter part of the press fermented dry in barrel and later blended here. Followed by a later rosé pick from A-W block at Willoughby. Unusually at Chalmers, the Nebbiolo preceeded the Refosco harvets, owing to very low yields in the Nebbiolo. The macerated Nebbiolo portions in this year's wine came exclusively from the new Chalmers vineyard planting, the remnants after Pat had classified the row selection for his Pat Underwood wines.\u003c\/p\u003e\u003cp sugg=\"true\"\u003eThese components were aged in various stainless and oak vessels according to their individual needs with various temperature and oxygen exposures depending on the tannin qualities of the individual wine. Pressing from all Colbinabbin reds were combined, and formed an important, delicious part of this wine. The wine was blended and retuned to barrel for a short period prior to bottling. The blend in 2024 is 56% Riesling, 42% Pinot Gris and a 2% dash of Chardonnay. The fruit grows on a trio of neighbouring blocks at Dash Farms in Leanganook\/Faraday. The Riesling sits just above the Chardonnay, with the Gris immediately to the left as you look up the slope. All share the granite soils and westerly exposition, with the Riesling and Chardonnay skewing a touch more northward.\u003c\/p\u003e\u003cp sugg=\"true\"\u003eThe varieties were harvested and processed separately. Each grape brings its own distinct qualities, and Pat likes to play to their strengths to end up with blending components that balance one another. The Riesling was harvested on flavour, and the juice was handled with care, protected from oxygen and clarified with a five-day cold settle. The clean juice fermented in stainless steel at relatively cool temperatures to retain as much aromatic purity as possible. It was racked off heavy lees once malolactic fermentation was complete and it was sugar dry for further maturation in stainless steel and barrique.\u003c\/p\u003e\u003cp sugg=\"true\"\u003eThe Pinot Gris was harvested when the numbers and flavours were at a point of balance, a little earlier than the team would typically pick for a maceration. This juice received some aggressive oxidation after relatively firm pressing. It was settled for a few days to lighten the solids load. The settled juice was then moved to a 1000-litre ceramic jar containing 75kg of hand-crushed Chardonnay bunches. They completed fermentation together, with the idea being to build complexity of flavour, tannin and a satisfying midpalate. The Gris and Chardonnay were racked directly from solids to tank after winter and combined with a single barrique of Riesling and the Riesling from tank. The wine settled for a further month in tank before bottling, with some sulphur added.\u003c\/p\u003e\u003cp sugg=\"true\"\u003e2024 is proving to be a lovely, balanced year for cooler sites in central Victoria. The grapes were whole-bunch pressed long and slow with only the best juice making it to tank. The fruit was foot-crushed before a slow and gentle press and overnight settling. It then went to tank for a cool ferment, \"We enjoy the healthy and elongated fermentation arc we see in tank,\" Pat says. The stainless ferment was stirred and moved to old and younger barrels once completely dry.
