Gaillac méthode ancestrale wines are really the mother of Pét-Nats, and the there is no better example than the Plageoles' Mauzac Nature. Gaillac has a very, very long history of producing méthode ancestrale (pét-nat) sparkling wines - a history that goes back to the 1500s (long before Champagne began producing sparkling wines). In fact, so synonymous was Gaillac with pét-nats back in the day that méthode gaillacoise was a widely used synonym for méthode ancestrale. The Plageoles example is made from a 40 year old parcel of the exceptionally rare Mauzac Rose grape variety. In simple terms, the naturally fermented base wine is chilled to stop the fermentation when there is still 25-30 g/l residual sugar remaining. The following spring, the wine is put into bottle and the fermentation continues under cork, producing the bubbles. There are no other additions and no need for dosage, as the bottle fermentation naturally stops when there is still a touch of residual sugar left in the wine.

A cracking, lip-smacking, slightly off-dry wine that is fragrant and textural, with citrus oil, cider apple, nettle and hazelnut notes. The modern renaissance of Chenin de Brézé (as it was once known), obviously owes a great deal to the Foucault brothers’ Brézé bottling, and more recently to the new generation of growers like Guiberteau. This striking wine comes from two small parcels of mature vines (planted in 1933 and 1952) within the fabled Brézé climat, a terroir that once produced wines equally as revered as those of the greatest vineyards of Burgundy and Bordeaux. Something like 70% of the vineyard has less than one metre of topsoil so the vines of any age must establish roots in the chalky bedrock. This terroir creates a far more citrus, floral and mineral expression of Chenin. Thierry Germain's amphora cuvees first appeared in 2013. Outre Terres, Out of the Earth, comes from 0.6 hectares of 20-year old vines rooted in the sand over limestone at Jeune de Carrefour - just walking distance from Saumur's suburbs. Germain de-stems the fruit, before loading into a single 800-litre Georgian amphora for fermentation and maceration. After 8 months the wine is pressing onto season oak barrels for 12 months. Bottled directly from barrel, there is no suphur used in this cuvee at all.

//cdn.shopify.com/s/files/1/0620/7468/3630/files/5ec51646-f99e-ee11-ac3e-02c0c1c8e708_14015-750.png?v=1703051129
champagne-laherte-freres-les-beaudiers-rose-de-saignee-nv-base-13-disg-mar-2016
Champagne Laherte Frères Les Beaudiers Rosé de Saignée NV (Base 13. Brunnhilde Claux calls the wine from this site Roc du Suzadou, after one of Minervois highest peaks. She considers it her ‘grand cru’ wine. Fascinatingly, Claux told us that she had recently been told (by an old wine-growing family in the area) that the rootstock used in this site is grafted to a phylloxera resistant clone derived from French vine species. We did not know that such a rootstock existed, and neither, it turns out, do most of the French! You learn something new every day. If it weren't for the Plageoles' resuscitation of Prunelart and Mauzac Noir, Duras would certainly be the oldest vine variety still grown in Gaillac today. Thanks to Bernard Plageoles' outspoken lobbying for this variety, it is now the most commonly planted of all of Gaillac's traditional red grape varieties and this wine shows you why. It comes from a parcel of 40-year-old goblet vines on the limestone and clay of Cahuzac-sur-Vère in the heart of the Gaillac country. As with all Plageoles wines, the yields are very low, the fruit is hand harvested and the winemaking is very simple - spontaneous fermentation, only a single pump over, aged in cement tank for one year, then bottling without fining or filtration.

Duras is a darker, savoury, more animal-like wine than Braucol and this 2015 is deliciously rich in macerated cherry, blackberry and spicy fruit with herb, game meat and peppery spice complexing the picture.
