We haven't yet tasted Moreau's single-vineyard 2014s, though this villages wine gives us a pretty good indication of what's in store; elegant and energetic wines full of ripe acidity and mineral grip. Moreau's Petit Chablis and Chablis are raised entirely in tank, it's not until the Vieilles Vignes level and above that Moreau incorporates oak matured parcels. However, 18 months élevage here is considerably longer than the vast majority of wham-bam-thank-you-ma'am Chablis, and the wine spends this whole time on lees, so you still find the textural authority we have come to expect from this Domaine.

//cdn.shopify.com/s/files/1/0620/7468/3630/products/c10f1e67-c217-ed11-ab3d-0ac90280dbea_12779-1500.png?v=1660280527
//cdn.shopify.com/s/files/1/0620/7468/3630/products/1d971e82-a83f-e911-aa0e-e22989258cf8_16559-750.jpg?v=1658785479
//cdn.shopify.com/s/files/1/0620/7468/3630/products/f1c64b9d-e05c-e911-aa0e-f46a36e9d148_16736-750.jpg?v=1658785702
//cdn.shopify.com/s/files/1/0620/7468/3630/products/93d4f805-e15c-e911-aa0e-d3cffc5c9002_16737-750.jpg?v=1658785704
//cdn.shopify.com/s/files/1/0620/7468/3630/products/fb0217d3-e15c-e911-aa0e-f46a36e9d148_16738-1500.jpg?v=1658785710
//cdn.shopify.com/s/files/1/0620/7468/3630/products/d406cebe-e15c-e911-aa0e-f46a36e9d148_16738-375.jpg?v=1658785708
//cdn.shopify.com/s/files/1/0620/7468/3630/products/5fc980a7-e15c-e911-aa0e-d3cffc5c9002_16738-750.jpg?v=1658785706
//cdn.shopify.com/s/files/1/0620/7468/3630/products/c3b48c1e-e25c-e911-aa0e-d3cffc5c9002_16739-750.jpg?v=1658785712
domaine-bernard-defaix-chablis-1er-cru-cote-de-lechet-2023
Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet 2018

Screwcap. The fruit was subject to a very gentle four-hour press, and the juice was fermented with natural yeasts (still a rarity in Chablis). It was raised mostly in tank, yet the élevage was unhurried and the wine spent 20 months on lees—considerably longer than most Chablis of this level. Indeed, Guffens told us he rates 2009 over 2010, the latter, being the more hyped vintage for whites! We shipped the Bougros Grand Cru from 2009. A monopole of Long-Depaquit, La Moutonne sits in a natural amphitheatre, mostly within the Vaudésir Grand Cru vineyard, but with a small protrusion into Les Preuses. The vineyard faces predominantly south and, coupled with a steep gradient, has a warmer microclimate than Vaudésir proper. This meant that when the AOC was formed, it missed out on the status it deserved. Regardless of the accuracy of this story, locals rightly speak very highly of this site: the position and thin, stony soils give a wine that’s intense and mineral.

Contributing to the quality of this wine is the vine age in Moreau’s tiny parcel (on average 50-plus years old) and the meagre yields they give (15-25 hl/ha is typical). It was primarily matured in a tank, yet the aging is unhurried, and the wine spends 20 months on lees—considerably longer than most Chablis of this level.
