Multiple passes to thin shoots, manually managed canopy, dual green harvests and hand harvesting of bunches delivered fruit that we think shows the best of the variety and the site.” The grapes were fully de-stemmed, fermented with indigenous yeasts in open fermenters, hand plunged and spent 10 days on skins prior to pressing. The understudy source is in Ashton, and contributes more underfloor, forest notes to offset the Piccadilly vineyard’s red-fruited intensity. \u003c\/p\u003e\u003cp class=\"richp\"\u003e\u003cbr\u003e\u003c\/p\u003e\u003cp class=\"richp\"\u003eThe fruit saw 40% whole-bunch fermentation, and was raised in one puncheon, one Stockinger 600 litre demi-muid and one Chassin barrique for up to 10 months. The final bottling is the product of strict selection, where Downer searched for wines that had the texture, layers and depth to go with that fragrant, perfumed lift that epitomises the best Adelaide Hills Pinot Noir. The wine was left unsulphured until late spring.
